Reducing red meat and choosing healthier, plant-based foods can promote longevity, improve food safety, and help prevent chronic disease.

Red meat is a staple in many diets, yet it raises significant concerns for human health. High intake of red and processed meat is linked to increased risk of cardiovascular disease, cancer, type 2 diabetes, kidney disease, premature death, antibiotic resistance, and foodborne illness.

Red meat contains high levels of saturated fat, cholesterol, and heme iron. Saturated fat and cholesterol can raise LDL (“bad”) cholesterol and damage blood vessels, while heme iron can promote oxidative stress and chronic inflammation.

 

Processed meats—often red meats such as bacon, sausage, hot dogs, ham, and deli meats—are typically cured, smoked, or salted and often contain added preservatives and other ingredients that can form carcinogenic compounds during processing, cooking, or digestion.

Because of consistent evidence that processed meats increase colorectal cancer risk, the World Health Organization classifies processed meat as carcinogenic to humans (Group 1). Red meat is classified as probably carcinogenic to humans (Group 2A).

Routine antibiotic use in livestock further fuels antibiotic‑resistant bacteria that can spread to people, while contamination during slaughter and processing can cause serious foodborne infections from pathogens such as E. coli, Salmonella, and Campylobacter.
