Tempeh Tofu Stir Fry

INGREDIENTS
200g firm tofu
1 tablespoon cornstarch
1 teaspoon smoked paprika
Oil for frying (grapeseed, peanut, sunflower, or canola)
400g tempeh, thinly sliced
1 red onion, thinly sliced
Pinch of sea salt
Pinch of demerara sugar (or any light brown sugar)
3 cloves garlic, thinly sliced
¼ cup homemade sambal hijau
3 tablespoons kecap manis (sweet soy sauce)
2 tablespoons white miso paste
5 green beans, roughly chopped (adjust as desired)
Pinch of dried mushroom powder
1 teaspoon liquid smoke
1 tablespoon white soy sauce
INSTRUCTIONS
Wrap the tofu in a clean kitchen towel and place something heavy on top. Let it sit for about 30 minutes to remove excess water.
Tip: Use a tofu press if you have one for quicker results.
Slice the tofu into your preferred shape (around 16 pieces works well).
In a shallow bowl, combine cornstarch and smoked paprika. Lightly coat the tofu pieces in this mixture.
Heat about an inch of oil in a skillet over medium heat.
You can check if the oil is ready by inserting a wooden chopstick—if small bubbles form around it, the oil is hot enough.
Carefully fry the tofu until both sides are golden and crisp.
Remove and drain on paper towels to remove excess oil.
Using the same skillet, fry the sliced tempeh in batches until golden on both sides.
Drain on paper towels and set aside.
Pour off excess oil, leaving just enough to coat the pan.
Add the sliced onion, salt, and sugar. Sauté until the onions soften and begin to caramelize.
Stir in the remaining tempeh and garlic. Cook until fragrant and lightly browned.
In a small bowl, combine sambal hijau and kecap manis. Add this mixture to the pan and stir well.
Dissolve the miso paste in ½ cup of hot water, then pour it into the skillet to deglaze. Bring to a gentle simmer.
Add the fried tofu, tempeh, and green beans to the skillet. Stir until everything is coated evenly.
Continue cooking until the green beans are slightly tender.
Adjust the flavor with a pinch of salt and mushroom powder.
Add the liquid smoke and white soy sauce, giving it a final toss.
Remove from heat and serve immediately over warm rice or noodles.
