Vegan Black Bean Burgers

INGREDIENTS
2 tablespoons ground flaxseed + 3 tablespoons water
2 cans (14.5 oz each) black beans, drained and rinsed
1 cup panko or plain breadcrumbs
2 teaspoons onion powder
1 teaspoon garlic powder
2 teaspoons ground cumin
2 teaspoons chili powder
1 teaspoon smoked paprika
½ teaspoon salt
½ teaspoon black pepper
2 tablespoons sriracha or your preferred hot sauce
Oil or nonstick spray, for cooking
INSTRUCTIONS
In a small bowl, combine flaxseed and water. Let it sit for a few minutes until it thickens into a gel-like consistency.
In a large mixing bowl, mash the black beans with a fork or potato masher—leave some chunks for texture.
Add the breadcrumbs, onion and garlic powder, cumin, chili powder, smoked paprika, salt, pepper, sriracha, and the flax mixture. Stir well until everything comes together.
Shape the mixture into 6 firm patties. You can chill them in the fridge until ready to cook or proceed right away.
Heat a nonstick pan over medium heat and lightly coat with oil. Once hot, cook each patty for about 5–6 minutes on each side, until browned and crisp.
To bake instead: Arrange patties on a parchment-lined baking sheet and bake at 350°F (175°C) for 10–12 minutes per side, or until firm and golden.
Serve on your favorite bun with toppings of choice—like lettuce, tomato, avocado, or vegan mayo!
