Spinach-Onion Cream Corona


  • 1 medium chopped white onion

  • 2 cups water

  • 2 ½ cups frozen spinach

  • 1 heaping tbls hemp seeds (for sprinkles)

  • 1 tbls nutritional yeast

  • 1 tbls almond butter or peanut butter

  • 1 tbls cornstarch

  • ½ tsp potassium/iodine salt

  • ¼ tsp iodized sea salt


Put the water in a sauce pan over high flame until boiling; add the onions. Cover, lower heat to medium, and cook 5 minutes. Whisk in all the other ingredients (except for the spinach and the hemp seeds); when gently bubbling, stir in the frozen spinach. Cook 8 minutes, stirring every 2 minutes. Lower flame if sticking or burning.

Sprinkle with hemp seed when dishing out. May be used as a dip when cool.
